The train operates Saturday dinner trains all year, with departures on Tuesdays and Thursdays added in June, and Monday and Wednesday runs filling out the schedule July through October.  In all cases, Sunday and Thursday runs are added in response to demand, and a seven-day-a-week schedule is offered during Fall Color season.  Lunch trains throughout the season on demand.  CIA-trained Executive Chef Edward Mimms prepares a five-course meal offering one of four entrees cooked to your order once you board, one of the first trains to offer this restaurant-style arrangement.
